Background
In June 1889, to honor the Queen consort of Italy, Margherita Savoy the Neapolitan chef Raffaele Esposito created the "Pizza Margherita," a pizza garnished with tomatoes, mozzarella cheese, and basil, to represent the colors of the Italian flag The Neapolitans take their pizza very seriously. Purists, like the famous pizzeria “Da Michele” in Via C. Sersale (founded 1870), consider there to be only two true pizzas — the Marinara and the Margherita — and that is all they served. These two "pure" pizzas are the ones preferred by many Italians today.
Our Pizza
Our classic Neapolitan Pizza’s are Individually created by you, our guest, in the “CLASSIC NEAPOLITAN TRADITION” with Double 00 Durum Wheat Flour, vine ripened tomatoes and aged cheeses. The result is a truly Neapolitan Pizza, of thin to medium thickness, lightly charred with a rich tomato flavor complimented by your choice of toppings, with an aroma and flavor only a hand crafted Neapolitan pizza provides.

Make your Own – “customer as artist”
Each restaurant guest will become the pizzaiolo – or pizza chef artist, using our hand-kneaded pizza dough as their canvas to create thousands and thousands of unique combinations. Our fresh ingredients. YUM!
Our pizza dough is different because it comes from hand-kneading the best Italian wheat flour to give it the taste and texture associated with true Neapolitan pizza. We only add sea salt, olive oil, and a pinch of sugar to our flour. Custom Built pizza dough is made in small batches and allowed to cultivate for a full 24-48 hours to ensure you have the best possible pizza.
Our Signature 1889 Margherita Pizza is made from the finest California tomatoes to make the sauce, Mozzarella di Bufala cheese imported from Italy and fresh basil locally sourced whenever possible.
